Made of tin plated pure copper, each tooth of this basic grater is carved by hand using a hammer and chisel called "Tagane." This traditional technique creates sharp edges on the teeth and slightly uneven height and spacing that is needed for smooth and easy grating. The hand finished teeth cuts through vegetables and fruits without crushing the cells, keeping moisture in their fibers. The fine cuts in the fibers produce a soft texture while retaining the flavor, making it ideal for grating daikon and condiments like garlic, ginger, and wasabi. For these reasons along with its antibacterial features, copper graters are widely used by professionals and often seen in sushi restaurants.
